When my father come on a 10-days visit, Matteo and I tought we had to organize something nice. We knew we were mainly going to stay in Tel Aviv and in Jerusalem, to discover the two cities, but we had planned to rent a car, so we tought it was the perfect opportunity to take a little peek at the hills around Jerusalem. We had been discussing with my dad about the options, and we were hesitant between visiting a winery or going to some cheese production farm. But then casually I found an article on the newspaper on cheese tasting on Shavuot, one of the major Jewish holiday and we were sold!
We immediately contacted Shvil Izim, a small family owned farm that grows goats and produces incredible cheese. The farm is in the moshav of Tel Shahar, a 45-minutes ride from Jerusalem. We arrived in a warm day and we found ourself in a delicate and enchanting atmosphere: friendly almost-human goats, kind people who show you their small business with passion and dedication, and a cute restaurant facing the surrounding yellow hills with dark green tops.
We had a tour of the farm in which we were introduced to the goats and we were taught all the steps of cheese production, from the milking to the ageing of the cheese. And of course we ended with the cheese tasting: incredible and delicious variety of cheeses with sweet names dedicated to the members of the family. Just a perfect day!
